When Ombudsmen visit long-term care facilities, not only do they talk to residents, but they also observe the facilities for cleanliness, staffing, temperature, and nutrition.
When they visit the smaller homes during meals, many times they observe the residents are being served frozen items that are full of fat and sodium. Because the staff have so many duties, owners believe serving these items will be easy to prepare and not consume a lot of time.
As ombudsmen, we are trying to change the norm and help staffs realize there are many things that can be prepared that are fresh and nutritional, easy and don’t require a lot of time.

Quick and Easy White Bean and Escarole Soup with Italian Sausage
½ lb. chicken sausage
2 cloves garlic sliced
6 cups low-sodium chicken broth
1-15.5 oz. can cannellini beans, rinsed and slightly mashed
1 ½ heads of escarole or spinach torn
2 zucchini sliced (optional)
